How far apart will Tom and Nicole have to sit? What designer will Gwyneth be wearing? Will Debbie's choreography be back? What's going to be on Wolfgang's after-party menu? These are among the many important questions that will no doubt be discussed by diners at our first Academy Awards Preview Dinner. Of course, once the food starts arriving at the tables, only one question will remain, "Can food get any better than this?"

Preparing star-studded, award-winning food has been the goal of Roland Schnider and Mark Silverberg since they arrived at the Hollywood Casino. Silverberg is a Certified Executive Chef who graduated from the CIA and set to work at fine hotels and casinos across the country, including Bally's Park Place, The Tropicana, and the Atlanta Sheraton Hotel. He's cooked for his share of celebrities, including Bridget Fonda, Dionne Warwick, Wayne Newton, and ZZ Top.

Swiss-born Roland Schnider attended restaurant school in Zurich and apprenticed in fine hotels and restaurants in and around Lucerne, where he once cooked for the Queen of England. Schnider came to the United States in 1981 and was quick to open a string of his own restaurants-Country Squire in Germantown, Tennessee, and River Terrace Yacht Club and No. 1 Beale in Memphis. In 1991 the local chapter of American Culinary Federation named Schnider "chef of the year."

Together at Fairbanks, Silverberg and Schnider have created a Hollywood-era steakhouse, a tribute to the sophistication and elegance of Douglas Fairbanks, that has won the Distinguished Restaurants of America Award for five years running. Jackpot! magazine said, "The total dining experience at Fairbanks takes you back to the gilded age of Hollywood stars and plush movie sets."
