Back in 1988, an ambitious Hawaiian-Japanese chef named Roy Yamaguchi opened a modern restaurant in Honolulu, where he perfected a signature style of Hawaiian–Asian fusion cuisine. Nineteen years, many awards, and countless accolades later, Yamaguchi heads an empire of 35 Roy’s restaurants worldwide with the help of his talented protégés.
