A native of Chicago, Jason Gorman got his kitchen start at
home, helping his mother make the specialties of her Italian
family. When he decided to turn professional, he headed to
Atlanta to apprentice under Russian chef Arkady Miretsky at
La Strada. Two years later Kevin Rathbun signed him up to
help with the opening of the Southwest-inflected NAVA. A stint
at The Grape, a wine bistro in Dallas, followed. Soon Gorman
was appearing on TV and in magazines and newspapers, including
The Dallas Morning News, which gave him a four-star
review.
But Gorman really came into his own when Stephan Pyles recruited
him to be executive chef at AquaKnox. Critics couldn’t
get enough of his seafood, which he prepared using ingredients
and techniques from around the world. The City Café
was next, and there, according to the Fort Worth Star Telegram,
Gorman’s food was “good enough to make a grown
woman cry.” (Please try to restrain yourself, though,
when you’re attending this very special Centennial Dinner.)
Despite The Dallas Morning News naming Gorman “Prince
of the City,” he left his kingdom to direct Dream Dance
at the Potawatomi Bingo and Casino in Milwaukee. Now he is
making the taste buds of diners dream and dance with such
dishes as foie gras with vanilla-scented duck jus, agnolotti
with potatoes and Stilton, lobster chowder, and locally raised
venison.
The original menu, designed by management consultants Joe
and Paul Bartolotta and executed by another chef, earned Dream
Dance a four-star review from Dennis R. Getto in the Milwaukee
Journal Sentinel. Getto praised the restaurant for “blend[ing]
Native American and European cultures subtly yet beautifully”
and called it “Milwaukee’s best new restaurant.”
Since early spring, Gorman has been in charge, and he is cooking
with confidence and style. Indeed, he “is taking Dream
Dance to new, even higher levels of culinary excellence,”
Dream Dance food and beverage director Michael Tsuchihashi
told Indian Gaming. “We’re already seeing
the results of his expertise and enthusiasm in the kitchen,
and he’s drawing raves in the dining room.”
