A couple of years back, Gregory Zapantis, a whiz-kid culinarian who exhibited a way with all things fishy (and we don't mean suspicious!), left his high-powered, high-rent midtown gig at Estiatorio Milos in search of an eatery with more neighborhood appeal. He teamed up with Peter Spyropoulus, his sous-chef at Milos, and restaurateur Nick Tsoulos, and headed for the Upper East Side. The result? Trata, an irresistible taste of the Greek coast. At his new address, Zapantis is turning out seafood that's made him a cult favorite among fish aficionados. This warm, cheerful eatery is packed with savvy East Siders feasting on Zapantis's kakavias (that's a classic fisherman's stew-Zapantis calls it "the grandfather of bouillabaisse"), psarosalata (lobster, scallop, and shrimp salad with fennel and herbs), and plaki (oven-baked snapper, Arctic char, or halibut with tomatoes, herbs, and vidalia onions)-plus a whole school of fish so delicious you'll swear you can see the Adriatic just beyond Second Avenue.

Zapantis has been fabricating fantastic fish flavors all his life. Born and raised in the Adriatic fishing village of Kefalonia, he learned to fish with his father, but it was his mother and grandmother who taught him to cook at the family's dockside restaurant. The recipes were handed down over three generations of family; Zapatis still uses a slew of authentic Greek seafood recipes collected in a cookbook written by his great-grandmother in 1891. These days, he's winning over jaded Manhattan foodie types with his food at Trata, named for a Greek fishing boat.
