His way. Pino Posteraro, former executive chef of Umberto Menghi's Il Giardino, has opened his long-awaited Cioppino's in Yaletown, Vancouver's trendy warehouse district. The menu features contemporary Mediterranean cuisine. Executive chef Kai Lermen has left Sutton Place Hotel to become executive chef of the new Ritz-Carlton Philadelphia, due to open in June. Andrew Carlile, executive sous-chef of Sutton Place, will replace Lermen while local boy Michael Deutsch becomes chef of the hotel's Fleuri Restaurant. Château Whistler Resort's Mallard Lounge has undergone a makeover, just in time to compete with the recently opened luxury Westin Spa & Resort, with its Aubergine Grille under executive chef Hans Stierli. David Forristal has left Tilman and Sandra Hainle's Amphora restaurant at Hainle Vineyards in theOkanagan Valley. Former Lumière chef de cuisine Frank Pabst and Vancouver Metropolitan Hotel maitre d' John Blakeley have opened Pastis, a contemporary French bistro. David Long (ex-Château Whistler) is executive chef of Vancouver Airport's new Fairmont Hotel, which offers meals-to-go as an alternative to airline food. The Four Seasons Hotel has a new restaurant chef for Chartwell in Susanah Coleman, and a new executive chef in DouglasAnderson (ex-Four Seasons, Chicago). David Griffith (ex-Westin Grand Hotel, Diva at the Met) is now executive chef of the Delta Vancouver Suites Hotel and its signature restaurant, Manhattan. Griffith replaces Ray Henry, who was transferred to the Hamilton Beach Princess Hotel in Bermuda. Bruce Knapik is the executive chef of the new Delta Pinnacle Hotel, which includes the 165-seat restaurant Showcase.
